🐟🥥 Light, tropical, and bursting with flavor—this Grilled Salmon Bites Bowl is pure summer in every bite! 🧾 Ingredients (Serves 2)

🔥 Grilled Salmon Bites
• 2 salmon fillets, cut into bite-sized cubes
• 1 tbsp olive oil
• 1 tsp garlic powder
• ½ tsp paprika
Salt & pepper, to taste
• Juice of ½ lime (optional)

🥥 Coconut Rice
• 1 cup jasmine rice
• 1 cup canned coconut milk
• 1 cup water
• ½ tsp salt

🍈 Papaya Cucumber Mint Salad
• 1 cup ripe papaya, diced 🍈
• ½ cup cucumber, thinly sliced 🥒
• 1 tbsp fresh mint, chopped 🌿
• Juice of ½ lime 🍋
• Pinch of salt
• Optional: chili flakes for a little heat

🌶️ Chili Honey Mayo
• ¼ cup mayonnaise
• 1 tsp honey 🍯
• 1–2 tsp sriracha or chili garlic sauce (adjust to spice level)
• 1 tsp lime juice
• Pinch of salt



🔪 Instructions

1. Cook the Coconut Rice
• Rinse rice thoroughly.
• In a saucepan, combine rice, coconut milk, water, and salt.
• Bring to a boil, then reduce heat to low. Cover and simmer for 15 minutes.
• Turn off heat and let sit covered for 5 minutes. Fluff with a fork.

2. Grill the Salmon Bites
• Toss salmon cubes with olive oil, garlic powder, paprika, salt, and pepper.
• Grill or pan-sear over medium heat for 2–3 minutes per side until golden and cooked through.
• Squeeze lime juice over them while hot.

3. Prepare the Salad
• In a bowl, toss papaya, cucumber, mint, lime juice, and salt (and chili flakes if using).
• Chill until ready to serve.

4. Make the Chili Honey Mayo
• In a small bowl, whisk together mayo, honey, sriracha, lime juice, and salt.
• Thin with a splash of water if you want a drizzle consistency.

5. Assemble the Bowl
• Scoop coconut rice into your bowl.
• Top with grilled salmon bites, papaya cucumber salad, and a generous drizzle of chili honey mayo.
Garnish with more mint or lime wedges if desired.
