Churrasco (Grilled Steak)
Ingredients:
2 lbs (900 g) beef skirt steak (or flank steak)
4 cloves garlic, minced
1/4 cup olive oil
1/4 cup fresh lime juice
2 tbsp soy sauce
1 tsp ground cumin
1 tsp smoked paprika
1/2 tsp black pepper
1/2 tsp salt
Fresh parsley, chopped (for garnish)
Directions:
Prepare the marinade: In a medium bowl, mix the minced garlic, olive oil, lime juice, soy sauce, ground cumin, smoked paprika, black pepper, and salt until well combined.
Marinate the steak: Place the beef skirt steak in a large resealable plastic bag or a shallow dish. Pour the marinade over the steak, ensuring it's evenly coated. Seal the bag or cover the dish and refrigerate for at least 2 hours, preferably overnight.
Preheat the grill: Preheat your grill to high heat, about 450°F (230°C).
Grill the steak: Remove the steak from the marinade, allowing excess marinade to drip off. Place the steak on the hot grill and cook for about 3-4 minutes per side, or until the steak reaches your desired level of doneness (medium-rare is recommended).
Rest and slice: Once cooked, remove the steak from the grill and let it rest for about 5 minutes. Slice the steak against the grain into thin strips.
Serve: Garnish with freshly chopped parsley and serve with your choice of sides, such as chimichurri sauce, grilled vegetables, or rice.
