🛒 Ingredients:
500g boneless chicken breast or thigh, cut into chunks 🍗

1 medium red onion, chopped 🧅

2 cloves garlic, minced 🧄

1 tbsp ginger, grated

2 tbsp curry powder or paste 🌶️

1 tsp ground cumin

1/2 tsp chili flakes (optional)

1 can (400ml) coconut milk 🥥

1 tbsp tomato paste

1 tbsp oil (vegetable or coconut) 🫒

Salt & pepper to taste 🧂

Fresh cilantro for garnish 🌿

Cooked basmati or jasmine rice for serving 🍚

👩‍🍳 Instructions:
Heat oil in a large skillet over medium heat. Sauté onion, garlic, and ginger until softened and fragrant. Stir in curry powder, cumin, and chili flakes and cook briefly. Add chicken pieces, season with salt and pepper, and brown on all sides. Stir in tomato paste and pour in coconut milk. Bring to a simmer and cook uncovered for 15–20 minutes until the sauce thickens and the chicken is fully cooked. Serve hot over fluffy rice and garnish with fresh cilantro.
