Ingredients:
- 200-300 grams salmon fillets, diced into 1-inch cubes
- 2 tbsp soy sauce
- 1 tbsp sriracha sauce (adjust according to your spice preference)
- 1 tbsp honey
- 1 tbsp minced garlic
- 1 tbsp lime juice
- 1½ tbsp olive oil
- 1 tbsp spicy mayo
Toppings: Sliced avocado, cucumber, shredded carrot, edamame, cilantro, sesame seeds

Instructions:
1. Make the Marinade: In a small bowl, mix together the sriracha, honey, soy sauce, minced garlic, and lime juice until fully blended. Taste and tweak the spiciness or sweetness by adding more sriracha or honey if desired.
2. Marinate the Salmon: In a shallow dish or Ziploc bag, place the salmon cubes and pour the marinade over them, ensuring they are well-coated. Cover the dish or seal the bag and let it marinate in the fridge for at least 30 minutes to enhance the flavors.
3. Cook the Salmon: Heat a frying pan over medium-high heat and add olive oil. Once heated, add the salmon cubes, making sure not to overcrowd the pan. Cook each side for about 2-3 minutes until the salmon is crispy. Avoid moving the salmon around to keep a nice sear.
4. Assemble the Bowl: After cooking the salmon, set it aside. In a bowl, layer your choice of steamed rice or quinoa, then top it with the cooked salmon, sliced avocado, cucumber, and edamame.
5. Garnish and Serve: Finish off your bowl with cilantro, sesame seeds, and a drizzle of spicy mayo. If you like it extra spicy, add more sriracha on top!
