🌾 Jasmine Rice
• 1 cup jasmine rice
• 1½ cups water
• Pinch of salt

🥭 Cucumber Mango Slaw
• ½ cup cucumber, julienned or thinly sliced 🥒
• ½ cup ripe mango, julienned or cubed 🥭
• 1 tbsp lime juice 🍋
• 1 tsp sesame oil
• Pinch of salt + chili flakes
• Optional: 1 tsp chopped mint or cilantro 🌿

🥣 Sesame Dressing
• 1 tbsp rice vinegar
• 1 tsp sesame oil
• 1 tsp soy sauce
• ½ tsp honey
• Toasted sesame seeds

🌶️ Chili Mayo
• ¼ cup mayo
• 1 tsp sriracha or chili garlic sauce
• 1 tsp lime juice
• Pinch of salt



🔥 Instructions

1. Cook Jasmine Rice
• Rinse jasmine rice until water runs clear.
• Combine with water and salt in a saucepan.
• Bring to a boil, reduce heat, cover, and simmer 15 mins. Let rest 5 mins, then fluff.



2. Prepare Salmon Bites
• Toss salmon cubes with soy sauce, sesame oil, garlic, honey, and cornstarch.
• Heat oil in a pan over medium-high heat.
• Sear salmon for 2–3 mins per side until caramelized and cooked through. Set aside.



3. Make the Slaw
• Toss mango and cucumber with lime juice, sesame oil, salt, and chili flakes.
• Add herbs if using. Chill until ready to serve.



4. Mix Dressings
• Whisk sesame dressing ingredients in a small bowl.
• In another bowl, stir together chili mayo until smooth.
