Shrimp and Egg Stir-Fry Recipe
Ingredients:
1 pound shrimp, peeled and deveined
2 large eggs
1 tablespoon vegetable oil
1/2 cup chopped onion
1/2 cup chopped green bell pepper
1/2 cup chopped red bell pepper
1/2 cup broccoli florets
1/4 cup soy sauce
2 tablespoons oyster sauce (optional)
1 tablespoon cornstarch
1 tablespoon water
1 teaspoon sesame oil
Salt and pepper to taste
Chopped green onions for garnish (optional)
Instructions:
1. In a small bowl, whisk together the eggs with a pinch of salt and pepper.
2. In another small bowl, whisk together the soy sauce, oyster sauce (if using), cornstarch, and water until smooth. Set aside.
3. Heat the vegetable oil in a wok or large skillet over medium-high heat. Add the shrimp and cook for 2-3 minutes per side, until pink and cooked through. Remove the shrimp from the wok and set aside.
4. Add the onion and bell peppers to the wok and stir-fry for 2-3 minutes, until slightly softened. Add the broccoli florets and stir-fry for another minute.
5. Pour the whisked eggs into the wok and cook, stirring constantly, until they are set but still slightly moist.
6. Return the cooked shrimp to the wok. Pour the soy sauce mixture over the shrimp and vegetables and stir-fry for 1-2 minutes, or until the sauce has thickened and coats the ingredients evenly.
7. Stir in the sesame oil. Season with salt and pepper to taste.
8. Garnish with chopped green onions, if desired.
9. Serve hot over rice or noodles.
