1 ripe avocado, diced 🥑
1/2 cup cherry tomatoes, halved 🍅

For the Sweet Potato Fries:
1 large sweet potato, cut into fries 🍠
1 tbsp olive oil 🫒
1/2 tsp garlic powder 🧄
1/2 tsp smoked paprika 🌶️

For the Bowl Base:
1 cup cooked quinoa or rice 🍚

1️⃣ Prepare the Fries: Preheat oven to 400°F (200°C). Toss sweet potato fries with olive oil, garlic powder, smoked paprika, salt & pepper. Bake for 20-25 minutes, flipping halfway.
