LEMON AND HERB CRUSTED CHICKEN
4 to 6 boneless chicken breasts or 8 boneless thighs
1/4 Tbsp. lemon juice
1/2 cup olive oil
1 1/2 Tbsp. butter, melted
toss chicken to coat with marinade

2 1/2 cups bread crumbs
1 Tbsp. paprika
2 Tbsp. dried chives
1 Tbsp. fresh rosemary
1 Tbsp. black pepper
pinch of salt
1 Tbsp. garlic powder
1 Tbsp. dried basil
1 Tbsp. curry powder
1/2 Tbsp. dill weed
chili powder to taste
1/2 Tbsp. cumin
1 Tbsp. thyme
In a shallow pan or bowl combine all the spices in a bowl. Dip marinaded chicken in the spices, making sure to coat well. Set on baking sheet.
Heat a medium to large oven-safe skillet, coat with olive oil,
Place chicken into the very hot pan of oil and brown on both sides, about 3 to 5 minutes each.
When chicken is par-cooked on both sides slide skillet into a preheated 375 degree F oven for about 5 - 8 minutes, or until golden brown.
Garnish with sliced lemons. Serve with rice or potatoes, and veggies
