So many vintage recipes have good bones, don't turn them away because of the popular use of processed foods in past decades. They can be easily updated. You can change-up ingredients to make it suit your own dietary needs...less sodium, fresh ingredients...you get the idea. 🙂

UPDATED RECIPE
OLIVE OIL
1 ½ LBS FRESH BROCCOLI, CHOPPED
1 MED. ONION, CHOPPED
1/2 CUP SLICED MUSHROOMS
1 CUP RICE, COOKED
1 CUP SHARP CHEDDAR, SHREDDED (SAVE A LITTLE FOR TOP)
1 CUP HOMEMADE WHITE SAUCE
OR ALFREDO SAUCE
SEASONING- FRESH HERBS, GARLIC, SALT 'N PEPPER TO TASTE.

COAT A FRY PAN WITH OLIVE OIL, ADD BROCCOLI ,ONION, AND MUSHROOMS SAUTE 3 MINUTES. STIR IN RICE, CHEESE, AND SAUCE, SEASON TO TASTE. POUR INTO BUTTERED CASEROLE DISH, BAKE AT 350 DEGREES F. FOR 20-25 MINUTES.
*YOU COULD EVEN ADD COOKED MEAT TO THIS DISH, CHOPPED CHICKEN, HAMBURGER, CHOPPED HAM.
