🛒 Ingredients:

For the Chicken Scampi:

1 lb boneless skinless chicken breasts, sliced thin

2 tbsp olive oil

3 tbsp butter

4 garlic cloves, minced

½ tsp red pepper flakes (optional)

Juice of 1 lemon

Zest of ½ lemon

Salt & black pepper, to taste

Fresh parsley, chopped (for garnish)

For the Garlic Parmesan Rice:

1 tbsp butter

1 cup long grain white rice

2 cups chicken broth

½ cup grated Parmesan cheese

2 garlic cloves, minced

Salt & pepper to taste

👩‍🍳 Directions:

Cook the Chicken:
Heat olive oil in a large skillet over medium-high. Season chicken with salt and pepper. Sear until golden and cooked through, about 4-5 minutes per side. Remove and set aside.

Make Scampi Sauce:
In the same skillet, melt butter. Add garlic and red pepper flakes, sauté 30 seconds. Stir in lemon juice and zest. Return chicken to pan, toss to coat in sauce. Keep warm on low heat.

Prepare the Rice:
In a separate saucepan, melt butter. Add garlic and rice, stir for 1-2 mins. Pour in chicken broth, bring to boil. Reduce heat, cover and simmer 18-20 mins or until rice is fluffy.

Finish the Rice:
Remove from heat, stir in Parmesan. Add salt and pepper to taste.

Serve:
Spoon a bed of garlic Parmesan rice onto plates, top with lemony chicken scampi, and garnish with chopped parsley.
