Keto No-Bake Chocolate Peanut Butter Cookies
These rich, chocolatey, no-bake cookies are the perfect low-carb treat-quick to make, satisfyingly chewy, and loaded with peanut butter and coconut flavor.
Ingredients:
11/2 cups organic peanut butter (no sugar added)
2 cups shredded unsweetened coconut
2 tsp vanilla extract
3 tbsp unsweetened cocoa powder
3 tbsp Lakanto sweetener (or your preferred keto-friendly sweetener)
2 tbsp butter, melted
Instructions:
1. Prepare a baking sheet by lining it with parchment paper or a silicone mat. Set aside.
2. In a large mixing bowl, combine the peanut butter, shredded coconut, vanilla extract, cocoa powder, and sweetener. Mix until well combined.
3. Pour in the melted butter and stir until the mixture is fully incorporated and thick, yet scoopable. If the mixture is too thick, you can microwave it for 10-15 seconds to soften.
4. Using a cookie scoop or tablespoon, drop spoonfuls of the mixture onto the lined baking sheet. Flatten slightly if desired.
5. Chill the cookies in the refrigerator for at least
30 minutes, or in the freezer for about 15 minutes, until firm and set.
6. Store the cookies in an airtight container in the fridge or freezer. They're perfect cold and chewy!
