For the Meatballs:
400g ground beef or mixed ground meat ๐ฅฉ
1 egg ๐ฅ
2 tbsp breadcrumbs ๐
1 small onion, finely chopped ๐ง
2 garlic cloves, minced ๐ง
1 tbsp chopped parsley ๐ฟ
Salt & pepper to taste ๐ง
1 tsp chili flakes ๐ถ๏ธ (optional for heat)
1 tbsp olive oil for frying ๐ซ
For the Sauce:
3 tbsp soy sauce ๐ฅข
2 tbsp honey ๐ฏ
1 tsp chili paste or sriracha ๐ถ๏ธ
2 tbsp water ๐ง
For the Veggie Mix:
1/2 cup corn kernels ๐ฝ
1/2 red bell pepper, chopped โค๏ธ
1/2 green bell pepper, chopped ๐
1/2 onion, chopped ๐ง
1 tbsp olive oil ๐ซ
Salt & pepper to taste ๐ง
๐ฉโ๐ณ Instructions:
Mix the ground meat with egg, breadcrumbs, onion, garlic, parsley, chili flakes, salt, and pepper. Roll into small balls and pan-fry in olive oil until browned and cooked through. In the same pan, mix the sauce ingredients and let simmer until slightly thickened, then return meatballs to coat in the glaze. For the veggie mix, sautรฉ the onion and bell peppers in olive oil for 3โ4 minutes, then add corn and season to taste. Serve the meatballs hot with the colorful veggies on the side!

Swap beef for chicken or turkey if preferred.
Add cooked rice or quinoa to make it a full meal.
For a milder version, skip the chili and use a sweet teriyaki-style sauce.
