🇮🇹 Risotto ai Carciofi (Artichoke Risotto)
Delicate and earthy, this creamy risotto showcases the fresh flavor of tender artichokes.
📝 Ingredients:
• 1 cup Arborio rice
• 2 fresh artichokes, cleaned and chopped (or use canned hearts)
• 1/2 onion, finely chopped
• 3 cups vegetable broth, warmed
• 1/4 cup Parmesan cheese, grated
• 2 tbsp olive oil
• 1 tbsp butter
• Juice of 1/2 lemon
• Salt and pepper to taste
👩🍳 Instructions:
1️⃣ Clean artichokes, removing tough leaves and choke. Slice and toss with lemon juice to prevent browning.
2️⃣ In a pan, heat olive oil and sauté onion until translucent.
3️⃣ Add artichokes and cook for 5 minutes. Stir in rice and toast for 1–2 minutes.
4️⃣ Gradually add warm broth, stirring often, until rice is al dente (about 18 minutes).
5️⃣ Stir in Parmesan, butter, salt, and pepper.
6️⃣ Serve hot, garnished with extra cheese or herbs if desired.
