Hoisin Ginger Pork Rice Bowl
Ingredients:
1 lb boneless pork loin, cut into 1-inch cubes
1 tablespoon cornstarch
1 tablespoon soy sauce
1 tablespoon hoisin sauce
1 tablespoon rice vinegar
1 tablespoon sesame oil
1 tablespoon grated fresh ginger
2 cloves garlic, minced
1 red bell pepper, thinly sliced
1/2 cup broccoli florets
1/2 cup snow peas
1/4 cup chopped green onions
2 cups cooked rice
Sesame seeds (for garnish, optional)
Sriracha or chili garlic sauce (for garnish, optional)
Instructions:
1. In a medium bowl, combine the pork cubes, cornstarch, soy sauce, hoisin sauce, rice vinegar, sesame oil, ginger, and garlic. Mix well to coat the pork evenly, ensuring all the pieces are thoroughly covered in the marinade. Let it marinate for at least 15 minutes, or longer for a more intense flavor (up to 30 minutes).
2. Heat a large skillet or wok over medium-high heat. Add the marinated pork and cook, stirring occasionally, until browned on all sides and cooked through, about 6-8 minutes. Remove the pork from the skillet and set aside.
3. Add the red bell pepper and broccoli to the skillet and stir-fry for 2-3 minutes, until slightly softened. Add the snow peas and continue to stir-fry for another minute or two, until they are crisp-tender.
4. Return the cooked pork to the skillet. Add the chopped green onions and stir to combine everything together. Heat through for about a minute.
