2 boneless, skinless chicken breasts
1 tbsp olive oil
1 tsp smoked paprika
1 tsp chili powder
1/2 tsp cumin
1/2 tsp garlic powder
Salt & pepper to taste
For the Bowl 🥣
1 cup cooked white rice 🍚
1/2 cup canned corn 🌽 (drained)
1/2 avocado 🥑 (sliced)
1/4 red onion 🧅 (thinly sliced)
1/2 cup cherry tomatoes 🍅 (halved)
2 tbsp guacamole 🥑
2 tbsp spicy mayo (or chipotle sauce) 🌶️
Fresh cilantro 🌿 for garnish

Marinate the chicken with olive oil, paprika, chili powder, cumin, garlic powder, salt, and pepper for 10–15 minutes. Grill or pan-sear on medium-high heat for 6–7 minutes per side until cooked through and nicely charred. Let rest and slice. Assemble bowls with a bed of rice, then arrange the corn, onion, avocado, tomatoes, guacamole, and chicken slices on top. Drizzle with spicy mayo and garnish with cilantro.
