🟠 Risotto Primavera
A light and colorful risotto featuring fresh seasonal vegetables, ideal for springtime.
Ingredients
• 1 cup (200 g) Arborio rice
• 4 cups chicken or vegetable broth
• 1 cup mixed vegetables (peas, carrots, zucchini)
• 2 tbsp butter
• ½ onion, finely chopped
• ½ cup grated Parmesan cheese
• Salt and black pepper, to taste
Instructions
1️⃣ Heat the broth and keep it simmering on low heat.
2️⃣ Melt butter in a wide pan and sauté the onion until translucent.
3️⃣ Add Arborio rice and toast it for 1–2 minutes, stirring constantly.
4️⃣ Begin adding the broth gradually, one ladle at a time, stirring until absorbed before adding more.
5️⃣ Add the mixed vegetables halfway through the cooking process.
6️⃣ Continue adding broth and stirring until the rice is al dente and creamy.
7️⃣ Stir in Parmesan cheese, season to taste, and serve hot.
