Turkey Taco Rice Bowl with Avocado Salsa
Southwest Turkey Taco Bowl with Zesty Rice and Fresh Avocado Salsa
Ingredients:
1 pound ground turkey
1 tablespoon olive oil
1 medium yellow onion, diced
2 cloves garlic, minced
2 tablespoons taco seasoning (homemade or store-bought)
1/4 cup water
1 can (15 oz) black beans, drained and rinsed
1 cup corn kernels (fresh, frozen, or canned)
2 cups cooked white or brown rice
1 lime, juiced and zested
1/4 cup fresh cilantro, chopped (plus more for garnish)
Salt and pepper to taste
For the avocado salsa:
2 ripe avocados, diced
1 cup cherry tomatoes, quartered
1/3 cup red onion, finely diced
1 jalapeño, seeds removed and finely diced (optional)
1/4 cup fresh cilantro, chopped
1 lime, juiced
Salt to taste
For serving:
1/2 cup Greek yogurt or sour cream
1/2 cup shredded Mexican-blend cheese
1/4 cup sliced green onions
Hot sauce (optional)
Lime wedges
Directions:
In a large skillet, heat olive oil over medium heat. Add diced onion and cook until softened, about 3-4 minutes.
Add minced garlic and cook for another 30 seconds until fragrant.
Add ground turkey to the skillet and break it apart with a wooden spoon. Cook until no longer pink, about 7-8 minutes.
Sprinkle taco seasoning over the turkey and add 1/4 cup water. Stir to combine.
Reduce heat to low and simmer for 5 minutes until the liquid has mostly evaporated and the turkey is well seasoned.
Stir in black beans and corn, and cook for an additional 2-3 minutes until heated through.
Meanwhile, prepare the zesty rice by combining cooked rice with lime juice, lime zest, chopped cilantro, salt, and pepper. Stir well.
For the avocado salsa, combine diced avocados, cherry tomatoes, red onion, jalapeño (if using), cilantro, lime juice, and salt in a bowl. Gently toss to combine.
To assemble the bowls, start with a base of the zesty rice in each bowl.
Top with the seasoned turkey mixture.
Add a generous spoonful of avocado salsa.
Finish with a dollop of Greek yogurt or sour cream, shredded cheese, and sliced green onions.
Garnish with additional cilantro, lime wedges, and hot sauce if desired.
Serve immediately while warm.
