Alright y’all this is one of my favs! don’t come at me this is just how I make it but you can add or remove what you like.
Cheesy cauliflower casserole (aka funeral potatoes dupe)
Ingredients
•5 cups riced cauliflower
•1/2 cup heavy cream
•1/4 cup unsweetened almond milk
•2 cups of your fav shredded cheese (mine was Colby jack
•1/2 can of cream of chicken (I know it’s not the most Keto thing but it works for me if I use a little)
•Salt/ pepper
•butter/ olive oil
Directions
•set oven 350°
•in large bowl mix cauliflower rice, cream of chicken, heavy cream, almond milk and 1 cup of shredded cheese and stir.
•coat casserole dish with butter or olive oil on the sides
• pour mixture from bowl
•top it off with the rest of the cheese (shredded or I used cheese slices for the top)
• yeet it in the oven for about 30-45 min
•take it out and enjoy your cheesy “potatoes”
I ate this through out the week and it was sooo yummy. Potatoes are my fav so this helps a lot! It’s also very filling.
