Grilled Chicken Yakitori Skewers
Ingredients:

1 lb boneless, skinless chicken thighs, cut into bite-sized pieces
1 tablespoon vegetable oil
1/4 cup soy sauce
2 tablespoons mirin (Japanese sweet rice wine)
1 tablespoon sake (optional)
1 tablespoon honey or brown sugar
2 cloves garlic, minced
1 tablespoon ginger, grated
1/4 teaspoon sesame oil
Bamboo skewers (soaked in water for 30 minutes)
Directions:

In a bowl, combine soy sauce, mirin, sake, honey, garlic, ginger, and sesame oil. Stir until the sugar is dissolved and the marinade is well mixed.
Add the chicken pieces to the marinade and toss to coat. Let the chicken marinate for at least 30 minutes (or up to 2 hours) in the refrigerator.
Preheat a grill or grill pan over medium heat. Thread the marinated chicken pieces onto the soaked bamboo skewers.
Brush the grill with a bit of vegetable oil to prevent sticking. Place the skewers on the grill and cook for about 3-4 minutes on each side, or until the chicken is fully cooked and has nice grill marks.
Brush the chicken with more marinade while grilling for extra flavor and moisture.
Serve the grilled yakitori skewers with a side of rice or vegetables, and garnish with sesame seeds and chopped green onions (optional).
