Thai-Inspired Soba Noodle Salad π₯π
This vibrant Thai-inspired salad is a refreshing and flavorful combination of soba noodles, tangy dressing, and fresh vegetables. Itβs the perfect dish for a light lunch, dinner, or a delightful side at your next gathering!
Ingredients:
Dried Soba Noodles: 15 oz
Rice Vinegar: β
cup
Soy Sauce: β
cup
Lime: 1 (zested and juiced)
Dark Sesame Oil: 1 Β½ tsp
Brown Sugar: 2 tbsp
Garlic: 2 cloves, minced
Red Pepper Flakes (optional): 2 tsp
Grated Carrot: 1 cup
Fresh Cilantro: Β½ cup, chopped
Salted Peanuts: ΒΌ cup, coarsely chopped
Directions:
1. Cook the Noodles:
Bring a pot of water to a boil. Add the soba noodles and cook for about 5 minutes, or until tender.
Drain and rinse the noodles under cold water to stop the cooking process, then set aside.
2. Prepare the Dressing:
In a mixing bowl, whisk together the rice vinegar, soy sauce, lime juice, dark sesame oil, brown sugar, lime zest, minced garlic, and red pepper flakes (if using) until the sugar is fully dissolved.
3. Combine the Ingredients:
In a large bowl, toss together the grated carrots, chopped cilantro, and salted peanuts.
Add the cooked soba noodles, cutting them into 3-inch lengths for easier mixing.
Pour the prepared dressing over the noodles and toss well to combine.
4. Chill and Serve:
Cover the bowl and refrigerate the salad for at least 1 hour to allow the flavors to meld together.
Before serving, give the salad another toss. Adjust the seasoning with additional soy sauce or rice vinegar, if desired. Serve chilled and enjoy the fresh burst of Thai flavors!
Tips:
For a milder Japanese flavor, omit the red pepper flakes, peanuts, and cilantro, and add ΒΌ cup of toasted sesame seeds instead.
If you donβt have soba noodles, feel free to use ramen noodles as a substitute.
