Filipino Chicken Adobo with Pineapple
Here’s the recipe:
It’s tender and juicy with garlic sweet and pineapple flavored adobo.
Recipe:
2 pounds chicken of choice
1/2 tsp salt and pepper
1/3 cup soy sauce
2 tbsp vinegar
4 cloves garlic
3 bay leaves
1 can pineapple tidbits plus juice
Oil to fry
Steps:
Mix all seasoning, liquid and can of pineapple except oil. Add the chicken into the bowl and marinade within 4 hrs or overnight for full flavor.
Once marinated, fry the chicken in 3 tbsp oil until golden brown on each side.
Add the marinade liquid to the pan where the chicken is, let it boil, simmer in low to medium heat till chicken becomes tender and the sauce thickens. Served on top of white rice. Enjoy!
