Vibrant & Healthy Cabbage Carrot Slaw with Zingy Peanut Sauce ✨🥗😋

Ingredients:
For the Slaw:
1/2 medium head green cabbage, finely shredded (about 4 cups / 400g)
1/2 medium head red cabbage, finely shredded (about 4 cups / 400g)
2 large carrots, peeled and julienned or grated (about 1.5 cups / 180g)
1 red bell pepper, thinly sliced
1/2 cup (25g) chopped fresh cilantro
1/4 cup (40g) chopped peanuts, for garnish
Optional: 3-4 green onions, thinly sliced

For the Peanut Dressing:
1/2 cup (128g) creamy peanut butter (natural, unsweetened)
1/4 cup (60ml) water
3 tablespoons (45ml) lime juice, freshly squeezed
2 tablespoons (30ml) maple syrup or agave nectar
2 tablespoons (30ml) low-sodium tamari or soy sauce
1 tablespoon (15ml) toasted sesame oil
1 clove garlic, minced
1 teaspoon grated fresh ginger
Optional: Pinch of red pepper flakes for heat

Directions:
1. In a large bowl, combine the shredded green cabbage, red cabbage, julienned carrots, sliced red bell pepper, and chopped cilantro (and green onions, if using). Toss gently to mix.
2. In a separate medium bowl, whisk together all the peanut dressing ingredients: peanut butter, water, lime juice, maple syrup (or agave), tamari (or soy sauce), sesame oil, minced garlic, grated ginger, and red pepper flakes (if using). Whisk until smooth and creamy. If the dressing is too thick, add a tablespoon of water at a time until desired consistency is reached.
3. Pour about two-thirds of the peanut dressing over the cabbage and carrot mixture. Toss well to coat everything evenly.
4. Let the slaw sit for about 10-15 minutes to allow the flavors to meld and the cabbage to slightly soften.
5. Taste and add more dressing if desired.
6. Garnish with chopped peanuts just before serving to maintain their crunch. Serve immediately or chilled.
