Sweet Chili Sauce and Filipino Lumpia
*****Make your own Sweet Chili Sauce
Great for dipping sauces, marinades or in stir friy if you want a spicy flavor!
Ingredients:
3/4 cup water
3/4 cup rice vinegar
1/2 cup sugar
1 teaspoon fresh ginger root, minced
1 hot chile pepper, minced
1 tablespoon dried pepper flakes
1 tablespoon ketchup
1 teaspoon garlic, minced
1 tablespoon cornstarch
In a pan, add all ingredients. Mix well. Turn on the stove. Keep stirring till boils. Lower the heat. Simmer until it thickens. Remove from the stove and let it cool for 5-10 before serving.
You can serve it warm or cold.
Store in refrigerator up to 3 days. Enjoy!
******Filipino Lumpia (Crispy Eggrolls)
These eggrolls are so crunchy and savory. Great with sweet chili sauce!
Recipe:
1 pound ground beef or any meat of choice
1 small onion, finely chopped
3 clove garlic, minced
1 cup shredded carrots
1 tablespoon soy sauce
1/2 teaspoon Salt and pepper
25 egg roll wrappers (thin papers)
Oil for frying
Steps:
In a pan, add the ground meat, onion, and garlic. Cook, stirring frequently, until the beef is cooked. Drain off any excess grease. Add the shredded carrots into the meat mixture and cook for 2 minutes, stirring occasionally. Add salt and pepper to taste. Remove the pan from the heat.
Set aside.
Lay an egg roll wrapper on a flat work surface. Place a 1 1/2 tablespoon of the meat mixture on the lower part of the wrapper. Fold the sides in then roll the egg roll wrapper up over the filling. Seal the edge with a little water and set aside.
Deep fry the eggrolls till golden brown. Serve with sweet chili sauce. Enjoy!
