🌶️🍤 Creamy Coconut Shrimp Curry with Rice 🌿

🛒 Ingredients:
400 g shrimp, peeled and deveined 🍤
1 tbsp oil (coconut or vegetable) 🛢️
1 onion, finely chopped 🧅
2 cloves garlic, minced 🧄
1 tsp fresh ginger, grated 🌱
2 tsp curry powder 🌶️
1/2 tsp turmeric
1 can (400 ml) coconut milk 🥥
1 tbsp tomato paste 🍅
Salt and pepper to taste
Juice of half a lime 🍋
Fresh cilantro for garnish 🌿
Cooked basmati rice, to serve 🍚

Heat oil in a large skillet over medium heat. Sauté the onion until soft, then add garlic and ginger, cooking for 1 more minute. Stir in curry powder and turmeric, letting the spices toast briefly. Add tomato paste and coconut milk, bringing everything to a simmer. Let the sauce cook for 8–10 minutes until slightly thickened. Add the shrimp and cook until pink and cooked through (about 5 minutes). Stir in lime juice, season with salt and pepper, and serve over fluffy basmati rice. Garnish with fresh cilantro.
