For the Bowl:
200g halloumi cheese, sliced 🧀
1 cup cooked basmati rice 🍚
1/2 cup cherry tomatoes, halved 🍅
1/2 cucumber, sliced 🥒
1/4 red onion, thinly sliced
1/4 cup Kalamata olives 🫒
1 tbsp chopped fresh parsley 🌿
Olive oil for grilling
For the Tzatziki (Yogurt Sauce):
1/2 cup Greek yogurt
1/2 cucumber, grated
1 garlic clove, minced 🧄
1 tbsp fresh dill, chopped
Salt & pepper to taste

Grill the halloumi slices in a hot pan with a touch of olive oil for 1–2 minutes per side until golden brown. In a bowl, mix cherry tomatoes, cucumber, red onion, olives, and parsley to make a quick Greek-style salad. Combine all tzatziki ingredients in a separate bowl and chill for a few minutes. Assemble the bowl by placing a mound of rice on one side, topped with a spoonful of tzatziki, then arrange the grilled halloumi and fresh salad around it. Serve immediately!
