Coconut Curry Shrimp 🍤🍛
Ingredients:
1 lb large shrimp, peeled and deveined
1 tablespoon olive oil
1 onion, chopped
2 garlic cloves, minced
1 tablespoon ginger, grated
1 can (14 oz) coconut milk
1 tablespoon curry powder
1/2 teaspoon chili powder
1/4 teaspoon salt (or to taste)
1/4 teaspoon black pepper
1 tablespoon lime juice
Fresh cilantro for garnish (optional)
Directions:
Heat the olive oil in a large skillet over medium heat.
Add chopped onion, and sauté for 2-3 minutes until soft.
Add minced garlic and grated ginger, and cook for another 1 minute.
Stir in curry powder, chili powder, salt, and pepper.
Pour in the coconut milk and bring the mixture to a simmer.
Let it cook for 5-7 minutes, allowing the sauce to thicken slightly.
Add the shrimp and cook for 3-4 minutes, until they turn pink and opaque.
Stir in lime juice, and adjust seasoning as needed.
Garnish with fresh cilantro (optional), and serve over rice or with naan.
