Honey Mustard Salmon with Herb-Infused Rice
Sweet and Savory Honey Mustard Glazed Salmon with Fragrant Herb Rice
Ingredients:
For the Salmon:
4 salmon fillets
3 tbsp honey
2 tbsp Dijon mustard
1 tbsp whole grain mustard
2 cloves garlic, minced
1 tbsp olive oil
½ tsp paprika
Salt and pepper to taste
1 tbsp lemon juice
For the Herb-Infused Rice:
1 cup basmati or jasmine rice
2 cups low-sodium chicken or vegetable broth
1 tbsp olive oil
1 clove garlic, minced
½ tsp onion powder
¼ cup fresh parsley, chopped
1 tbsp fresh dill, chopped
Salt and pepper to taste
Directions:
Preheat the oven to 400°F (200°C). Line a baking sheet with parchment paper.
In a small bowl, whisk together honey, Dijon mustard, whole grain mustard, minced garlic, olive oil, paprika, salt, and pepper.
Place the salmon fillets on the prepared baking sheet and brush generously with the honey mustard mixture.
Bake for 12-15 minutes, or until the salmon is cooked through and flakes easily with a fork. Remove from the oven and drizzle with lemon juice.
While the salmon is baking, prepare the rice. Rinse the rice under cold water until the water runs clear.
In a medium saucepan, heat olive oil over medium heat. Add minced garlic and sauté for 30 seconds until fragrant.
Add the rice, onion powder, and broth. Bring to a boil, then reduce heat to low, cover, and simmer for 15-18 minutes until the rice is tender.
Remove from heat and let it sit covered for 5 minutes. Fluff with a fork and stir in fresh parsley, dill, salt, and pepper.
Serve the honey mustard salmon over the herb-infused rice. Enjoy!
