Broccoli, Rice, Cheese, and Chicken Casserole
Ingredients:
2 cups water
2 cups uncooked rice
1 (10-ounce) can cream of chicken soup
1 (10-ounce) can cream of mushroom soup
2 cups cooked chicken, shredded
1/4 cup butter
1 cup milk
1 small white onion, chopped
16 ounces broccoli pieces
2 cups Cheddar cheese, shredded
Directions:
1. Preheat your oven to 350°F (175°C). Lightly grease a 9x13-inch baking dish.
2. In a medium pot, bring water to a boil. Add the rice, reduce heat to low, cover, and cook for 15-20 minutes or until the rice is tender.
3. In a large skillet, melt the butter over medium heat. Add the chopped onion and sauté until softened, about 3-4 minutes.
4. In a large bowl, mix together the cooked rice, cream of chicken soup, cream of mushroom soup, shredded chicken, milk, sautéed onions, and broccoli pieces. Stir until well combined.
5. Pour the mixture into the prepared baking dish, spreading it evenly.
6. Sprinkle the shredded Cheddar cheese on top.
7. Bake in the preheated oven for 25-30 minutes, or until the casserole is hot and bubbly, and the cheese is melted.
8. Let cool slightly before serving.
