Irresistible Crispy Tofu Fresh Rolls with Sweet Chili Dip Sensation 🥢🇹🇭💛

Ingredients:
For the Tofu & Marinade:
1 block (14 oz / 400g) firm or extra-firm tofu, pressed
2 tablespoons (30ml) soy sauce or tamari
1 tablespoon (15ml) lime juice
1 teaspoon (5ml) maple syrup or agave
1/2 teaspoon (2.5ml) ground ginger
1/4 teaspoon (1.25ml) garlic powder
1 tablespoon (15ml) cornstarch (for coating)
2 tablespoons (30ml) neutral oil, for frying

For the Rolls:
8-10 sheets of rice paper (22cm / 8.5 inch diameter)
3.5 oz (100g) rice vermicelli noodles
1 large carrot, julienned
1 cucumber, julienned
1/2 red bell pepper, thinly sliced
1 cup (30g) fresh mint leaves
1 cup (30g) fresh cilantro leaves
Lettuce leaves (e.g., butter lettuce)

For Sweet Chili Dipping Sauce (Quick Version):
1/4 cup (60ml) sweet chili sauce
1 tablespoon (15ml) lime juice
1 teaspoon (5ml) soy sauce or tamari (optional)

Directions:
1. Marinate Tofu: Slice the pressed tofu into thin strips (about 1/4 inch or 0.5 cm thick). In a shallow dish, whisk together soy sauce, lime juice, maple syrup, ginger, and garlic powder. Add tofu strips, ensuring they are coated. Let marinate for at least 15-20 minutes.
2. Cook Vermicelli: Prepare rice vermicelli noodles according to package directions. Drain, rinse with cold water, and set aside.
3. Crisp the Tofu: Remove tofu from marinade, pat lightly with a paper towel, then toss with cornstarch until lightly coated. Heat oil in a non-stick skillet over medium-high heat. Pan-fry tofu strips for 3-4 minutes per side, until golden brown and crispy. Transfer to a paper towel-lined plate.
4. Prepare Rolling Station: Fill a shallow dish with warm water. Lay a clean, damp tea towel on your work surface.
5. Assemble Rolls: Dip one rice paper sheet in warm water for 15-20 seconds until pliable. Lay it flat on the damp towel. Arrange a lettuce leaf on the lower third. Top with a small amount of vermicelli, some julienned carrot, cucumber, bell pepper, a few mint and cilantro leaves, and 2-3 crispy tofu strips.
6. Roll Tightly: Fold the bottom edge over the filling. Fold in the sides. Then, roll up tightly from the bottom.
7. Repeat for all rolls.
8. Make Dipping Sauce: Whisk together sweet chili sauce, lime juice, and soy sauce (if using) in a small bowl.
9. Serve: Serve fresh rolls immediately with the sweet chili dipping sauce.
