Ingredients:
For the Chocolate Sponge Cake:
3/4 cup all-purpose flour
1/4 cup cocoa powder
1 tsp baking powder
1/4 tsp salt
4 large eggs (room temperature)
3/4 cup granulated sugar
1 tsp vanilla extract
2 tbsp milk
For the Peanut Butter Filling:
1 cup creamy peanut butter
1/2 cup unsalted butter (softened)
1 cup powdered sugar
2 tbsp heavy cream
For the Chocolate Ganache (Optional Topping):
1/2 cup heavy cream
1/2 cup semi-sweet chocolate chips
Garnish:
Chopped peanuts
Chocolate shavings
Instructions:
Preheat the Oven:
Preheat your oven to 350°F (175°C). Line a 10x15-inch jelly roll pan with parchment paper and grease it lightly.
Make the Chocolate Sponge Cake:
In a bowl, sift together the flour, cocoa powder, baking powder, and salt.
In a separate large bowl, beat the eggs and sugar with an electric mixer until pale, thick, and tripled in volume (about 5 minutes).
Gently fold in the dry ingredients in batches, alternating with the milk and vanilla extract, until just combined.
Spread the batter evenly in the prepared pan.
Bake for 10-12 minutes, or until the cake springs back when lightly touched.
Roll the Cake:
While the cake is still warm, place a clean kitchen towel over it and carefully invert the cake onto the towel.
Remove the parchment paper and gently roll the cake (with the towel) into a tight spiral. Allow it to cool completely.
Prepare the Peanut Butter Filling:
In a mixing bowl, beat the peanut butter and softened butter until creamy.
Gradually add powdered sugar, beating until smooth. Add heavy cream and mix until fluffy.
Assemble the Roulade:
Unroll the cooled cake and spread the peanut butter filling evenly over the surface.
Gently re-roll the cake (without the towel), wrapping it tightly.
Make the Ganache (Optional):
Heat the heavy cream in a saucepan until it just starts to simmer. Pour it over the chocolate chips and let sit for 1 minute. Stir until smooth and glossy.
Pour the ganache over the rolled cake, letting it drip down the sides.
Garnish and Serve:
Sprinkle with chopped peanuts and chocolate shavings for garnish.
Slice and serve chilled or at room temperature.
