1 ¼ lbs chicken breasts
¼ cup olive oil
2 tbsp honey
2 tbsp lemon juice
1 tbsp lemon zest
1 ½ tsp dried oregano
1 ½ tsp dried basil
1 tsp garlic powder
½ tsp red pepper flakes
Salt & pepper to taste
4 cups romaine lettuce
2 cups cherry tomatoes (halved)
2 cups cucumber (diced)
2 cups cooked white or brown rice
½ cup feta cheese (optional)
Tzatziki Sauce:
1 cup plain Greek yogurt
½ cup grated cucumber
1 tbsp fresh dill
1 tbsp lemon juice
1 tsp garlic (minced)
Directions:
1. Marinate chicken with olive oil, honey, lemon juice, zest, and spices for 30 minutes.
2. Grill or cook in a skillet until golden brown, 7-8 minutes per side. Let rest before slicing.
