These Spicy Coconut Curry Scallops are a flavorful, rich, and creamy dish with just the right amount of heat. Tender scallops cooked in a coconut curry sauce, perfect for a quick, exotic meal that feels like dining at a fancy restaurant!
Ingredients:
1 lb large sea scallops
1 tbsp olive oil
1 tbsp butter
1 small onion, diced
3 cloves garlic, minced
1 tbsp fresh ginger, minced
1 tbsp red curry paste
1 can (13.5 oz) coconut milk
1 tsp fish sauce
1 tbsp soy sauce
1 tbsp lime juice
1 tsp brown sugar
1-2 tsp chili flakes (optional for extra heat)
Fresh cilantro for garnish
Cooked jasmine rice (for serving)
Directions:
Prep the Scallops:
Pat the scallops dry with a paper towel and season with a little salt and pepper.
Sear the Scallops:
Heat olive oil and butter in a large pan over medium-high heat. Add scallops in a single layer and sear for 2-3 minutes on each side until golden brown and cooked through. Remove and set aside.
Make the Curry Sauce:
In the same pan, reduce heat to medium and add the diced onion. Sauté for about 2-3 minutes until softened.
Add garlic and ginger, cooking for another minute until fragrant.
Stir in the red curry paste and cook for 1 minute. Add coconut milk, fish sauce, soy sauce, lime juice, and brown sugar, stirring until well combined. Simmer for 5 minutes until the sauce thickens slightly.
Add Spice:
If you like it spicier, sprinkle in chili flakes and stir.
Finish with Scallops:
Add the seared scallops back into the pan, spooning the sauce over them. Simmer for another 2 minutes to let the flavors meld.
Serve:
Serve over a bed of jasmine rice, garnish with fresh cilantro, and enjoy the spicy, creamy goodness!
