Chinese Honey Chicken
Ingredients:
1 pound chicken breast, cut into 1-inch thin chunks
4 large egg whites
¾ cup cornstarch (or Mochiko Sweet Rice Flour as a substitute)
⅓ cup water
½ cup mayonnaise
¼ cup honey
2 tablespoons sweetened condensed milk
Vegetable oil, for frying
Instructions:
Make the batter: In a large bowl, whisk the egg whites until foamy (about 1–2 minutes). Add cornstarch and water, and whisk until smooth. Gently fold in the chicken pieces until they’re well coated.
Fry the chicken: Heat 3 inches of oil in a deep pot over medium-high heat until it reaches 350°F (175°C). Working in two batches, fry the chicken for 2–3 minutes per batch, or until golden brown and crispy. Transfer to a paper towel-lined plate to drain.
Prepare the sauce: In a clean large bowl, whisk together mayonnaise, honey, and sweetened condensed milk until the mixture is smooth and creamy.
Combine and serve: Just before serving, toss the freshly fried chicken in the sauce until evenly coated. Garnish with sesame seeds if desired.
Notes:
For best results, serve immediately to enjoy maximum crispiness.
Pair with steamed rice, stir-fried vegetables, or a light salad for a balanced meal.
You can double the sauce if you prefer your chicken extra saucy.
