One-Pan Bold Honey BBQ Chicken Rice
Ingredients:
2 cups cooked rice
1 lb (450g) boneless, skinless chicken breast, cut into bite-sized pieces
1 tablespoon olive oil
1/2 teaspoon salt
1/2 teaspoon black pepper
1/2 teaspoon garlic powder
1/2 teaspoon smoked paprika
1/2 cup barbecue sauce
2 tablespoons honey
1 tablespoon soy sauce
1 tablespoon apple cider vinegar
1/2 teaspoon red pepper flakes (optional)
2 green onions, chopped, for garnish
Directions:
Heat olive oil in a large skillet over medium-high heat. Add the chicken pieces, season with salt, pepper, garlic powder, and smoked paprika. Cook for 5-6 minutes until browned and fully cooked.
In a small bowl, whisk together the barbecue sauce, honey, soy sauce, apple cider vinegar, and red pepper flakes.
Pour the sauce over the cooked chicken, stirring to coat evenly. Let simmer for 2-3 minutes until the sauce thickens and caramelizes.
Add the cooked rice to the skillet, stirring to combine with the sauce and chicken. Let it heat through for another 2 minutes.
Garnish with chopped green onions and serve hot.
