🦐 For the Shrimp:
300g raw shrimp, peeled and deveined
1 tbsp olive oil 🫒
1 clove garlic, minced 🧄
Salt & pepper to taste
Optional: squeeze of lemon 🍋
🍚 For the Rice:
1 cup jasmine or white rice
2 cups water 💧
Pinch of salt 🧂
🥦 For the Veggies:
1 small zucchini, sliced into rounds
150g asparagus, trimmed
1 tbsp olive oil 🫒
Salt & pepper to taste
👨🍳 Instructions:
Cook the rice in salted water until fluffy. Meanwhile, toss shrimp with olive oil, garlic, salt, and pepper, and grill or pan-fry for about 2–3 minutes per side until pink and cooked through. Brush zucchini and asparagus with olive oil, season with salt and pepper, and grill or roast until tender and slightly charred. Assemble everything in a bowl with rice, shrimp, and veggies. Serve warm with a squeeze of lemon if desired.
