🧄 Garlic Butter Chicken with Parmesan Rice 🍗🍚
Ingredients:
For the Garlic Butter Chicken:
4 boneless, skinless chicken breasts 🍗
3 tablespoons unsalted butter 🧈
4 cloves garlic, minced 🧄
1 teaspoon dried thyme
1 teaspoon dried rosemary
1/2 teaspoon paprika
Salt and pepper to taste 🧂
1/4 cup chicken broth
2 tablespoons fresh parsley, chopped (for garnish) 🌿
For the Parmesan Rice:
1 cup long-grain white rice 🍚
2 cups chicken broth
1/2 cup grated Parmesan cheese 🧀
1 tablespoon unsalted butter 🧈
1/2 teaspoon garlic powder
Salt and pepper to taste 🧂
Directions:
1️⃣ Prepare the Garlic Butter Chicken:
In a large skillet, melt the butter over medium heat.
Add the minced garlic and cook for about 1 minute, or until fragrant.
Season the chicken breasts with thyme, rosemary, paprika, salt, and pepper.
Add the chicken breasts to the skillet and cook for 6-7 minutes on each side, or until the chicken is golden brown and cooked through.
Remove the chicken from the skillet and set aside.
Pour the chicken broth into the skillet, scraping up any browned bits from the bottom. Simmer for 2-3 minutes.
Return the chicken to the skillet and spoon the garlic butter sauce over the top.
Garnish with fresh parsley before serving.
2️⃣ Prepare the Parmesan Rice:
In a medium saucepan, melt the butter over medium heat.
Add the rice and garlic powder, and cook for 1-2 minutes, stirring frequently.
Pour in the chicken broth and bring to a boil.
Reduce the heat to low, cover, and simmer for 18-20 minutes, or until the rice is tender and the liquid is absorbed.
Stir in the grated Parmesan cheese and season with salt and pepper to taste.
3️⃣ Serve:
Spoon the Parmesan rice onto plates and top with Garlic Butter Chicken.
Drizzle with extra garlic butter sauce from the skillet.
