SAPIN SAPIN RECIPE
Ingredients:
- 1/2 kl glutinous rice flour
- 2 cans of coconut milk
-1 can condensed milk
- 1/2 cup sugar
- 1 cup water
- 1 tsp vanilla extract
-flavor extracts (violet ube, yellow langka) or food coloring
-latik (toppings)
Instructions:
1. Prepare the Batter:
- In a large bowl, combine the glutinous rice flour, coconut milk, condensed milk and vanilla extract. Mix until smooth and well combined.
2. Sift the mixture to remove the lumps.
- Divide the batter into three equal parts, placing each portion in separate bowls.
2. Prepare the Colors and Flavors:
- In the first bowl, mix violet food coloring to achieve a purple color.
- In the second bowl, mix yellow food coloring.
- Leave the third bowl plain for the white layer
3. Steam the Layers:
- Pour the purple (ube) batter into the prepared pan, spreading it evenly. Steam for 8 minutes or until set.
- Once the purple layer is set, pour the yellow (jackfruit) batter on top, spreading it evenly. Steam for another 8 minutes or until set.
- Finally, pour the plain (white) batter on top, spreading it evenly. Steam for an additional 8 minutes or until set.
4. Cool and Garnish:
- Allow the Sapin Sapin to cool completely before removing it from the pan / molder.
- Sprinkle the top with toasted grated coconut (latik) for added flavor and texture.
5. Serve and enjoy!
