Mouthwatering Chicken, Broccoli & Mushroom Stir-Fry with Steamed Rice 🍛🥦🍗

Ingredients:
For the Stir-Fry:
🍗 Chicken breast – 2 (diced)
🥦 Broccoli florets – 2 cups
🍄 Mushrooms – 1 cup (sliced)
🧄 Garlic – 2 cloves (minced)
🧅 Onion – 1 small (diced)
🥄 Soy sauce – 2 tbsp
🥄 Oyster sauce – 1 tbsp
🥄 Sesame oil – 1 tsp
🥄 Cornstarch – 1 tsp (mixed with 2 tbsp water for slurry)
🌶️ Optional: Red pepper flakes – a pinch for heat
For the Rice:
🍚 Cooked white rice – 2 cups
Directions:
Cook the Chicken:
Heat a non-stick pan with sesame oil. Add diced chicken and cook until golden and fully cooked. Remove from pan and set aside.
Stir-Fry the Veggies:
In the same pan, sauté garlic and onion until fragrant. Add broccoli and mushrooms, stir-frying for 5 minutes until tender-crisp.
Make the Sauce:
Return the chicken to the pan. Add soy sauce, oyster sauce, and the cornstarch slurry. Toss everything together and cook for another 2 minutes until the sauce thickens.
Assemble the Bowl:
Serve the stir-fry over a bed of steamed white rice. Garnish with a sprinkle of sesame seeds or chopped scallions if desired.
Notes/Variations:
Add a drizzle of hoisin sauce for added sweetness.
Swap white rice with brown rice or quinoa for a healthier alternative.
Add carrots or bell peppers for extra color and crunch!
