2 tablespoons brown sugar

For the Cranberry Sauce:

1 cup fresh cranberries
1/2 cup apple juice
1/4 cup sugar
1/4 teaspoon cinnamon
1/8 teaspoon cloves
Instructions:

Prepare the Pork Loin: Preheat oven to 375°F (190°C). In a small bowl, combine Dijon mustard, brown sugar, olive oil, thyme, garlic, salt, and pepper. Rub this mixture all over the pork loin.
Roast the Pork Loin: Place the pork loin in a roasting pan and roast for 1 hour to 1 hour 15 minutes, or until the internal temperature reaches 145°F (63°C). Cover loosely with foil and let rest for 10 minutes before slicing.
Make the Cranberry Sauce: In a small saucepan, combine cranberries, apple juice, sugar, cinnamon, and cloves. Bring to a boil, then reduce heat and simmer until the cranberries pop and the sauce thickens.
Make the Apple Cider Glaze: In a separate saucepan, combine apple cider, Dijon mustard, brown sugar, and balsamic vinegar. Bring to a simmer and reduce until thickened.
Serve: Serve the sliced pork loin with the cranberry sauce and apple cider glaze.
