You will need a candy thermometer
Boil syrup in a saucepan to 235°F
do not stir
remove from heat
Cool to 100°F (30+ min.)
** transfer the pan to an ice bath to rapidly cool the syrup
Mix slowly until lighter in color and the consistency of peanut butter (30+ min.)
**Start whipping the maple syrup with a stand mixer or electric mixer on medium speed for about 25-30 minutes until it turns off-white and achieves a fluffy, creamy texture. If you want a thicker consistency, whip for a longer time, but be careful not to overdo it.
Store in refrigerator in a sealed container or mason jar
