Keto Peanut Butter Fudge
Ingredients
1 cup natural peanut butter (unsweetened, no added sugar)
1/2 cup coconut oil (or unsalted butter)
1/3 cup powdered erythritol (or monk fruit sweetener)
1 tsp vanilla extract
Pinch of salt (optional, if peanut butter is unsalted)
Instructions
Melt base
In a saucepan over low heat, combine peanut butter and coconut oil (or butter). Stir until smooth.
Sweeten & flavor
Remove from heat and whisk in powdered erythritol, vanilla, and salt (if using).
Pour & set
Pour mixture into a parchment-lined baking dish and smooth the top.
Chill
Refrigerate for at least 2 hours (or freeze 45 minutes) until firm.
Cut & serve
Slice into small squares and enjoy.
