🛒 Ingredients
For the Butter Chicken:

🐔 1 lb (450g) chicken breast, cubed

🧈 2 tbsp butter

🧅 1 small onion, finely chopped

🧄 3 garlic cloves, minced

🫚 1 tsp grated ginger

🍅 3/4 cup tomato purée

🧂 Salt & pepper to taste

🌶️ 1 tsp paprika

🧂 1/2 tsp garam masala

🧁 1/2 cup heavy cream

🌿 Fresh parsley or cilantro, chopped (for garnish)

For the Rice:

🍚 1 cup basmati rice

💧 2 cups water

🧂 Pinch of salt

For the Spiced Potatoes:

🥔 2 medium potatoes, peeled and cubed

🫒 1 tbsp olive oil

🌿 1/2 tsp turmeric

🌶️ 1/4 tsp chili powder

🧂 Salt & pepper

👩‍🍳 Instructions

Cook the rice: Rinse rice well. Boil with salted water, cover, simmer 12–15 minutes. Fluff with fork.

Prep the potatoes: Toss cubed potatoes with olive oil, turmeric, chili powder, salt & pepper. Roast at 400°F (200°C) for 20–25 minutes until golden.

Make the butter chicken: In a skillet, melt butter over medium heat. Sauté onions 3–4 minutes, add garlic and ginger. Cook 1 minute more.

Add chicken cubes and cook until golden outside (5–7 mins).

Stir in tomato purée, paprika, garam masala, and salt. Simmer 8–10 mins.

Lower heat, stir in cream, simmer another 2 minutes until rich and creamy.
