Classic French Ratatouille

Ingredients:
1 medium eggplant, diced
2 zucchinis, sliced into half moons
1 bell pepper, diced (red or yellow)
1 large onion, chopped
3 cloves garlic, minced
2 large tomatoes, chopped (or 1 can of diced tomatoes)
1/4 cup olive oil
1 tsp dried thyme
1 tsp dried oregano
1 tsp dried basil (or 2 tbsp fresh basil, chopped)
Salt and pepper, to taste
Fresh basil, for garnish (optional)
Instructions:
1. Prepare the Vegetables:
Wash and chop all the vegetables: dice the eggplant, slice the zucchinis, chop the bell pepper, onion, and tomatoes.
If using fresh basil, chop it finely for garnish later.
2. Sauté the Aromatics:
In a large skillet or saucepan, heat 2 tbsp of olive oil over medium heat.
Add the onion and sauté for about 5 minutes until softened and translucent.
Add the garlic and cook for another 1–2 minutes, until fragrant.
3. Cook the Vegetables:
Add the eggplant, zucchini, and bell pepper to the pan. Stir well and cook for about 10 minutes, allowing the vegetables to soften slightly.
Stir occasionally to prevent sticking. If needed, add a bit more olive oil (1–2 tbsp).
4. Simmer the Ratatouille:
Add the chopped tomatoes, dried thyme, oregano, basil, salt, and pepper to the vegetables. Stir everything together.
Reduce the heat to low and cover the pan. Let it simmer for about 20–25 minutes, stirring occasionally until the vegetables are tender and the flavors are well blended.
5. Serve:
Taste the ratatouille and adjust the seasoning with more salt, pepper, or herbs if needed.
Serve the ratatouille warm, garnished with fresh basil if desired.
