Sweet & Spicy Thai Mango Avocado Salad That Pops With Flavor 🥭🥑🌶️
Ingredients:
Salad:
1 large ripe mango, peeled and diced
1 ripe avocado, peeled and diced
1 red bell pepper, thinly sliced
1/2 cup / 30g shredded carrots
1/4 cup / 40g red onion, thinly sliced
1/4 cup / 10g fresh cilantro, chopped
1/4 cup / 10g fresh mint, chopped
1/2 jalapeño or Thai chili, finely minced (optional, adjust to spice preference)
2 tbsp / 20g chopped peanuts (for garnish)
Peanut Dressing:
3 tbsp / 45ml creamy peanut butter
2 tbsp / 30ml lime juice
1 tbsp / 15ml soy sauce (or tamari for gluten-free)
1 tbsp / 15ml maple syrup or honey
1 tsp / 5ml sesame oil
1 clove garlic, minced
1/2 tsp grated ginger
2-3 tbsp / 30-45ml water (to thin)
Directions:
1. Prepare the dressing: In a small bowl, whisk together peanut butter, lime juice, soy sauce (or tamari), maple syrup (or honey), sesame oil, minced garlic, and grated ginger. Gradually whisk in water until the dressing reaches a smooth, pourable consistency.
2. Prepare the salad ingredients: Dice the mango and avocado (add avocado just before serving to prevent browning, or toss gently with a little lime juice). Thinly slice the red bell pepper and red onion. Shred the carrots. Chop the cilantro and mint. Mince the chili, if using.
3. In a large bowl, gently combine the diced mango, sliced red bell pepper, shredded carrots, sliced red onion, chopped cilantro, chopped mint, and minced chili (if using).
4. Just before serving, add the diced avocado and gently toss.
5. Pour the peanut dressing over the salad and toss lightly to coat everything evenly.
6. Garnish with chopped peanuts before serving.
