🛒 Ingredients:
2 boneless chicken breasts, diced 🍗
1 tbsp olive oil 🫒
Salt & pepper to taste 🧂
1/2 tsp garlic powder
1 cup long-grain rice (e.g., jasmine or basmati) 🍚
1 zucchini, chopped 🥒
1 large carrot, julienned 🥕
1/2 tsp chili flakes (optional)
1/2 tsp soy sauce or seasoning of choice
👩🍳 Instructions:
Cook rice according to package instructions. Meanwhile, heat 1/2 tbsp olive oil in a skillet and cook the chicken with salt, pepper, and garlic powder until golden brown and fully cooked. In another pan, heat the remaining olive oil and sauté the zucchini and carrots until tender, about 6–8 minutes. Season veggies with a pinch of salt and chili flakes or a splash of soy sauce for added flavor. Plate the rice, chicken, and vegetables side by side and serve warm.
