Comforting Ginger Garlic Broth with Soft Noodles
Ingredients:
- 6 cups vegetable broth
- 2-inch piece of ginger, thinly sliced
- 4 garlic cloves, minced
- 1 tablespoon sesame oil
- 2 tablespoons soy sauce
- 1 tablespoon rice vinegar
- 1 teaspoon chili flakes (optional)
- 200g rice noodles or soba noodles
- 1 cup bok choy, chopped
- 1 cup mushrooms, sliced
- 2 green onions, chopped
- Fresh cilantro and lime wedges for garnish
Directions:
1. Heat sesame oil in a pot over medium heat. Add ginger and garlic; sauté until fragrant.
2. Pour in the vegetable broth and bring to a simmer. Add soy sauce, rice vinegar, and chili flakes (if using).
3. Simmer the broth for 10 minutes to infuse the flavors.
4. Meanwhile, cook the noodles according to package instructions. Drain and set aside.
5. Add bok choy and mushrooms to the broth. Cook for 3-5 minutes until tender.
6. Divide cooked noodles into bowls. Ladle the hot broth and vegetables over the noodles.
7. Top with green onions, cilantro, and a squeeze of lime juice before serving.
