Dark Chocolate Peanut Butter Greek Yogurt Banana Muffin Bars
Ingredients:
2 ripe bananas, mashed
1/3 cup creamy peanut butter
1/3 cup Greek yogurt (plain, full-fat or 2%)
1/4 cup maple syrup or honey
1 egg
1 teaspoon vanilla extract
3/4 cup whole wheat flour (or all-purpose)
1/2 teaspoon baking soda
1/4 teaspoon salt
1/2 cup dark chocolate chunks (plus more for topping)
Directions:
Preheat oven to 350°F (175°C). Line an 8x8-inch baking pan with parchment paper or lightly grease it.
In a large bowl, whisk together mashed bananas, peanut butter, Greek yogurt, maple syrup, egg, and vanilla until smooth.
In a separate bowl, combine flour, baking soda, and salt. Add dry ingredients to wet and stir until just combined.
Fold in dark chocolate chunks gently.
Pour batter into prepared pan and spread evenly. Sprinkle more chocolate chunks on top.
Bake for 20–25 minutes or until a toothpick inserted in the center comes out clean.
Allow to cool before slicing into bars.
