✨ Ingredients
For the Crust:
• 6 cups (about 180g) crisp rice cereal
• ¼ cup (57g) salted butter
• 1 (10 oz / 283g) bag mini marshmallows
For the Filling:
• 1 (8 oz / 227g) block full-fat cream cheese, softened
• ½ cup (100g) granulated sugar
• 1 tsp pure vanilla extract
• 1 (7 oz / 198g) jar marshmallow fluff (or creme)
• 1 (8 oz / 227g) tub thawed whipped topping (Cool Whip or stabilized whipped cream)
For Garnish (Optional but Recommended):
• Whipped cream (homemade or canned)
• 4–6 small cubed Rice Krispy Treats (homemade or store-bought)

PREP THE PAN
Generously grease a 9- or 10-inch springform pan with nonstick spray. Avoid using a regular cake pan—springform is essential for clean release.
BUILD THE CRUST
→ In a large bowl, place the rice cereal. Set aside.
→ In a medium saucepan over low heat, melt butter and mini marshmallows together, stirring constantly until smooth and glossy (about 5–7 minutes).
→ Immediately pour melted mixture over cereal. Using a greased spatula or spoon, fold until every puff is evenly coated.
→ Transfer to prepared pan. Press mixture firmly into the bottom and slightly up the sides (about ½-inch high) using a greased glass or measuring cup.
→ Let crust set at room temperature for 20 minutes while you prepare the filling.
WHIP THE FILLING — GENTLE IS KEY
→ In a large bowl, beat softened cream cheese, sugar, and vanilla with a hand mixer until completely smooth (1–2 minutes). Scrape down sides.
→ Add marshmallow fluff. Beat on low until fully incorporated.
→ GENTLY fold in the whipped topping using a silicone spatula—use broad, slow strokes to preserve airiness. Do not use a mixer here.
ASSEMBLE & CHILL
→ Pour filling into the set crust. Smooth the top with an offset spatula.
→ Cover loosely with plastic wrap (don’t let it touch the surface) and refrigerate for at least 2 hours—or overnight for best results.
GARNISH & SERVE
→ Just before serving, pipe or dollop whipped cream around the edge.
→ Artfully arrange cubed Rice Krispy Treats in the center for a playful, textural crown.
→ Carefully release the springform clasp. Slice with a warm, clean knife for perfect portions.
