Salmon bowl with cilantro lime rice, avocado and tomato salsa and a hard boiled egg over mixed green...

Salmon bowl with cilantro lime rice, avocado and tomato salsa and a hard boiled egg over mixed greens.

🐟🍣 For the salmon, pat dry and place a piece of salmon over lemon slices on a sheet pan. Season with black pepper, garlic powder and a drizzle of olive oil. Bake or air fry on 425 F for 15 minutes until cooked through.

🍚🌿 For the cilantro lime rice, add two cups cooked brown or white rice to a bowl. (I used precooked microwaveable brown rice from a packet). Toss with fresh lime juice, fresh chopped cilantro and season with salt and pepper.

🥑🍅 For the avocado and tomato salsa add diced tomato and avocado to a bowl with chopped red onion. Add a drizzle of extra virgin olive oil, a splash of red wine vinegar (or lime juice) and season with salt and pepper. Mix gently to combine.
