Ingredients:
For the Steak:
250g beef (sirloin or ribeye), diced π₯©
1 tbsp olive oil π«
1 tsp lime juice π
1 tsp chili powder πΆ
Β½ tsp cumin
Β½ tsp garlic powder π§
Salt & black pepper to taste
For the Bowl:
1 cup cooked white rice π
Β½ cup corn kernels π½
Β½ cup cherry tomatoes, diced π
ΒΌ cup red onion, chopped π§
For the Guacamole:
1 ripe avocado π₯
Β½ lime, juiced π
1 tbsp chopped cilantro πΏ
Salt & black pepper to taste
Instructions:
Marinate the Steak: Mix steak with olive oil, lime juice, chili powder, cumin, garlic powder, salt, and pepper. Let it marinate for 10 minutes.
Cook the Steak: Heat a pan over medium-high heat and sear the steak pieces for 3-4 minutes per side until browned.
Prepare the Guacamole: Mash the avocado and mix with lime juice, cilantro, salt, and pepper.
Assemble the Bowl: Divide the rice into bowls, then top with steak, corn, tomatoes, red onion, and guacamole.
Serve & Enjoy: Garnish with extra cilantro and a squeeze of lime!
